Shannon’s story

Hi, so I have been in Oregon since the early 90’s. I am originally from Upstate New York where I am a 14th generation Wolcott (Somerset, England). Growing up my family had cider get-together where they would make cider together. Living in the Willamette Valley I have had great access to amazing wine, and got to see the craft beer industry blossom. Almost 4 years ago I decided to start home-brewing cider to see if I could make something interesting. The fist cider I made was a Blueberry cider at 10% abv, it was super dry and delicious. I decided to start ^5 cider while I was attending school full time at PSU. My husband and I came up with the name ^5 cider (high 5 cider) after shooting down other names. I looked our Australian Shepard and asked her to do a high five and it’s like a light bulb turned on, we knew we had our name. That was the start of our yearlong journey of starting up our cidery. I do not like added sugar in my cider so I don’t use it. Keeping ingredients pure is important to me, I don’t want to use artificial chemical things. My juice is real juice, not from concentrate. I can get away with using juice that is mainly made from desert apples because my main product is a fruit cider. My favorite thing to do is to play with flavors by adding other fruits into primary fermentation and see what interesting combinations I can come up with.

This loan is special because:

It supports an entrepreneur providing ciders made from real and fresh ingredients.

Business Description

I decided to start ^5 cider while I was attending school full time at PSU. My husband and I came up with the name ^5 cider (high 5 cider) after shooting down other names. I looked our Australian Shepard and asked her to do a high five and it’s like a light bulb turned on, we knew we had our name. That was the start of our yearlong journey of starting up our cidery. I went to the OSU “How to Start a Craft Cidery”, then through PSU I did the “Business of Craft Beverages” classes to get an understanding of how to go about starting and running an alcohol business. Now that we are up and running I make cider with my little sister and my husband sells it.

What is the purpose of this loan?
