Andrea’s story

I was born in Rome, Italy I have been in the food industry my entire life. I grew up in a family of restaurateurs, I have owned multiple restaurants, coffee shops and pizzerias in Rome and other cities in Italy and here in California. I have been General Manager of important restaurants in US. My passion has always been the pizza. I opened my own pizzeria in 1994 in Rome and I sold it in 2003 to move to the US. My goal since then is “to change the perception of the pizza in the US”. It makes me sad to see that here pizza is considered garbage food, thus wiping out thousands of years of history of this amazing meal. I am determinate to provide healthy and delicious pizza all through the States.

Business Description

Agricola is the first company in California to produce a Take and Bake pizza with a long fermentation-processed-dough as in the most authentic Italian tradition.

Our dough, made with non gmo flour only, water, extra virgin olive oil, salt and a very small amount of yeast, raises naturally at a precise refrigerated temperature for 72 hours. This natural fermentation improves the product in many different ways, but the most important one is healthiness. A crust which is light and robust in taste at the same time with a very low amount of gluten and low calories make Agricola unique.

This is, finally, a pizza that kids can eat without parents being worried about the chemicals ingredients in it. We use only local organic ingredients and DOP tomatoe sauce from Italy,

Today, Agricola is sold in the most popular and important groceries stores in San Francisco, East Bay, Santa Cruz, Monterey, Carmel, Reno etc. and it just started in Whole Foods. (ca. 30 groceries)

The demand is dramatically increasing and we need to invest in a new oven that will help to increase by 5 the productivity per hour, a new packaging machine that will bring today’s 120 packaged pizza per hour to 320. Also, 20% of our capital will be intended to massive Demo campaign. We need to make our future customers personally try the pizza (and we are looking for them everywhere in any way). This is why we are also in the process to apply to few Farmers Markets in San Francisco and the Peninsula.

Should you ask me what is the main quality of Agricola pizza I will say that, above all its unique nutritional properties, once you try it you will never go back to other pizzas. In fact, since I was delivering myself with my own car the first 30 pizza per week one year ago (today we produce around 500 pizzas weekly) I never had a month with decrease in sales. Even if by few units, since the beginning there has been only increasing numbers.
