To produce the freshest matcha, NEOMATCHA has chosen tea farmers who combine traditional methods with modern technology. Prior to the Spring harvest, green tea fields are gradually covered in order to reduce the amount of sunlight exposed to the leaves. Shading is only implemented for high-grade teas that are used to produce the some of the best matcha in the world. By reducing natural photosynthesis in the leaves, the plants increase chlorophyll production, which gives our matcha its vibrant color.
While green tea is harvested in many countries such as China, Vietnam, and Indonesia, only Japan produces the highest-quality matcha. Our matcha is cultivated in Nishio, which is located in the heart of the Aichi Prefecture. Nishio’s ideal misty climate and rolling hills makes it the perfect region to produce a very high grade Japanese green tea. The tea produced in Nishio has a much deeper taste and aroma as well as a more vibrant green color.
Matcha, the unsung superfood, is a finely stone ground, green tea powder that contains a wealth of antioxidants, amino acids, chlorophyll, and other vitamins and nutrients. Unlike steeped tea, the amount of nutrients consumed when drinking matcha exceeds the brewed water because you ingest the whole leaf. Matcha is traditionally prepared by adding hot water to the matcha powder and whisking to a froth.
Antioxidant Activity
Our ceremonial grade matcha is exceedingly rich in antioxidant, which provide protection from harmful molecules that are responsible for aging, tissue damage, and even some inflammatory diseases.
Oxygen radical absorbance capacity, or ORAC, is a method of capturing antioxidant capacities. The ORAC value of NEOMATCHA’s ceremonial grade matcha has over 14 times the antioxidant activity of wild blueberries.

L-theanine, a natural amino acid in matcha, increases alpha wave frequencies which induces a state of calm alertness. This attribute of matcha promotes relaxation while boosting concentration. The amino acid is also known to reduce anxiety and enhance mood.
As matcha is digested, caffeine molecules bind to larger molecules, like catechins. The resulting effect is a slower breakdown of caffeine in the bloodstream, which prevents the symptoms of jittering and crashing normally caused by coffee.
