Personal Story

Believe it or not, the world’s best kale chips can be traced to the suburbs of Chicago, where I was raised by my amazing mother – a single parent whose busy work schedule often left me to my own devices, for better or worse. Such circumstances instilled two things in me that ultimately led to the founding of itskale: an unhealthy (pardon the pun) addiction to snacking, and an industrious independent streak (driven by hunger and curiosity).

My creative drive led me to attend Parson’s School of Design, where I studied product development. That step combined with my obsession with food and hospitality led me to pursue a culinary education from FCI, followed by many grueling years of training in the fine dining and Michelin-starred temples of NYC and abroad. Et voila, food creation became my “raison d’ etre” – translated: reason for snacking.

Fast forward to my work as Chef and Director of Citi Executive services, where I put my love of fresh, quality ingredients and decades of creativity and technique to work. During my time there, I transformed the company’s menu from merely “fancy delicious” to “how the heck did all of these superfoods end up tasting so great?!?”. But with my independent streak and hunger at a tipping point, I made the leap into entrepreneurialism to bring a percolating idea to fruition that was on my mind for years. And that’s when itskale was born.

Itskale is a culmination of my upbringing, formal education, and culinary experience. It is the product of years of research of how to put the “SUPER” into “superfood”. And itskale doesn’t stop there. Venturing beyond the visible superfood horizon as a crunchy chip pioneer, itskale chips have found a happy home in TwiceAsSuperfoodLand, where they now reside at a secluded beach on a private island, aka organic farm.

In all seriousness, itskale is the new sheriff in town when it comes to crunchy chips. I have perfected the look and crunch of the triangular chip that Americans know and love, and combined it with the taste and health benefits of fresh, organic ingredients. No small feat by any stretch of the snacking imagination.

Itskale kale chips surpass the competition in two crucial aspects: (1), they don’t rely on a dehydrator to turn a kale leaf into something vaguely resembling the crunch of a chip and crumbling at the sight of dip, and (2), a strict adherence to the sourcing of fresh kale that imparts unmatched flavor and color no other kale chip can provide. In other words, this isn’t a “chip” that can be bootstrapped at home – we assemble our chips by combining fresh kale, chia seeds, olive oil and other organic/gluten-free ingredients in a proprietary process that preserves the integrity of the ingredients and imparts unmatched taste, texture, and vibrance.

This unique combination makes itskale chips an incredibly versatile snack that can be enjoyed by health nuts and snack addicts alike! There’s no longer a trade off between eating healthy, eating responsibly, and amazing taste.

What is the purpose of this loan?

A loan for itskale would help fund packaging upgrades in conjunction with a streamlining of our packaging process. This will include a a refresh of print design (as well as preparation for upcoming flavors and certification seals – shhh stay tuned), the purchase of machinery to further mechanize the process (to help lower labor costs) and increase purchasing quantities, thereby imparting pricing efficiencies. While lowering costs in purchasing and better preparing the team with mechanized tools, we hope to move into the next level of production (slash world domination).

The loan will go toward:
$8,000 on upgraded design and packaging
$2,000 on packaging equipment
