Hello, my name is Jason Poole, the “Brine Boss” of Preservation & co. I have lived in Sacramento for nearly 8 years now, and grew up in Colorado. I have spent the last 17 years of my life in the restaurant and bar industry, working in every front of the house position. During that time, I developed a love for food and cooking. I knew that I wanted to own a business in the food industry, but never know what type of business it would be until I was pushed in this direction by great friends and relatives. My passion for food preserving is driven by the interest to explore methods that at one point were necessary for farmers to preserve their crops, and survive the winter. My family has a background in farming, so this was always important to me. Now that I find myself in Sacramento, I knew that the time was now to start my future as a business owner, and leave restaurant work behind. Sacramento is the “Farm To Fork Capitol” because of the great produce that is grown a short distance from here. I am thrilled to be located in an area that can supply the produce I need to create amazing products.

Business Description
Preservation & co is a company founded in 2011 that prides itself on creating handcrafted specialty foods products. We started this business due to a love of food, and the preservation methods used to make that produce last. What started as a hobby just done for friends, turned into a business selling at farmers markets and local shops. Just a few short years later, we opened our production facility in the heart of Sacramento.
We have found that the specialty foods market is growing very quickly due to our customers becoming more educated about their food and where it comes from. After our company won the Silver Medal in the Absolut Vodka National Bloody Mary Search, our customer base blew up. It was time to do this full time, and expand our line.
We are now distributed in 12 states across the country, and are growing by the day. The struggles that we now face is that we have nearly exhausted our operating capitol while moving into new markets. We could grow faster, and penetrate more of the market, if we had access to more capitol. I am thrilled that we produce a quality product that is so enjoyed by our customers, and I am very happy that our morals as a company have never, and will never be compromised.
What is the purpose of this loan?
We will be able to approach new distributors. Hire an additional production employee to help us stay on top of orders. We will no longer need to factor our invoices, which currently is a high percentage loan.
